Winter Salad

Few weeks back, I asked on my Instagram stories what new recipes the audience wanted to learn. Amongst the inputs that I received, ‘Salads’ were something I had not explored much. I promised myself to make a beneficial recipe that is rich in nutrients, taste and comforting.

Initially I had planned to make a quinoa salad but then thought why not try the same with what would be readily available to most people and is familiar. ‘Daliya’ or sprouted cracked wheat which is high in protein, iron & fiber, good for muscles and even help in weight management became my grain of choice and base for the salad. But, you can go with Quinoa also if you have that at hand.


Let me introduce you to the amazing list of ingredients for the salad :

  1. Daliya
  2. Beetroot
  3. Oranges
  4. Pine nuts
  5. Walnuts
  6. Garlic
  7. Cottage Cheese/Paneer/ Tofu(vegan)
  8. Coriander leaves
  9. Salt & Pepper
  10. Orange Juice
  11. Olive Oil

All these ingredients make a great winter salad combination. Beets are rich in iron, calcium, vitamins A & C, a great source of folic acid. Cottage cheese is a source for protein, calcium & fats. Oranges not just add freshness to the salad, are full of Vitamin C that is good for the skin’s collagen. Nuts are always a good idea for getting fats & nutrients in the body during winters.

For Salad preparation :

A. Garlic Daliya

Take a wok and heat some olive oil in it. Add chopped garlic cloves and saute for a couple of seconds. Now, add Daliya to the wok and roast it for 5-8 mins . Pour some water ( almost 1/4 quantity of Daliya) add salt  & mix well, cover the wok and let it cook on low heat. Cook it till the Daliya is soft, chewy and has fluffed up. The grains should be fluffy and separate, you don’t want to make a mash or paste so be careful with the water.

B. Roasted Beetroot

Preheat the oven to roast the beetroot. Wash & peel a medium beetroot and drizzle some olive oil over it and season with salt and pepper. Wrap the beetroot in aluminium foil or baking paper and roast it for about 25 -30 mins.

C. Salad Dressing

Keeping it really simple; take juice of half an orange and mix with 1 tbsp of olive oil. Season with salt and pepper and mix well. It’s ready ! (* You may add a tsp of lemon juice for that extra tangy flavor but its optional)

D. Toast nuts & Season Cottage Cheese

E. Assemble the Salad

Lay a bed of garlic flavored Daliya/cracked wheat and start layering it with cottage cheese, thinly sliced beetroot, orange segments and toasted nuts. Finally drizzle the dressing all over and garnish with coriander leaves to complete.


This salad is a meal in itself; colorful & vibrant, warm & nutrient rich. It is hard to have salads sometimes specially during the colder months but, this salad is going to be the game changer. Each ingredient adds a new dimension to the flavor and texture. There are juicy oranges, crunchy nuts, chewy grains, soft earthy beetroot and delicate paneer that’ll change the way you look at salads.
